Introduction

More quick-bread like than muffiny. Still awesome for 84 calories. Freeze them and take out one in the morning, 20 minutes on the counter and it will be defrosted and ready to grill/toast, if you so choose with no muffin binges. More quick-bread like than muffiny. Ingredients

    3/4 c granulated sugar substitute for baking
    1/2 cup canned pumpkin
    dash salt
    1.5 cups frozen berries of any combo, defrosted
    1 medium egg
    I tangerine, juice and zest
    1 cup water
    2 T baking powder
    extract of choice
    2 cups organic white whole wheat flour

Directions

Preheat oven to 350.

Combine all, folding in berries and flour last. Portion 1/3 of a cup into each cup of a sprayed 12-ct muffin tin.

Bake 20 minutes or until a toothpick, inserted into center, comes out clean.

Makes 12 muffins.
