Just bake a batch over the weekend and throw the extras in the freezer. Then, on weekday mornings, microwave a muffin for 30 seconds for a portable meal. Ingredients

1/2 C oat bran
1 C whole-wheat flour
1/4 C ground flaxseed
1 tsp baking soda
1 1/2 tsp baking powder
1 tsp ground cinnamon
1 tsp nutmeg
1 egg, beaten
1/4 C Plain Yogurt
1/4 C sugar
1/3 C applesauce (unsweetened)
1 small apple, peeled and chopped
1/4 C chopped pecans (optional, but included in nutritional info)
Directions
1.Preheat oven to 350 degrees F.
2.In a large bowl, whisk together bran, flour, flaxseed, baking soda, baking powder, cinnamon, and nutmeg.
3.In a separate bowl, whisk together egg and yogurt until smooth. Stir in applesauce, chopped apple and sugar. Combine mixtures and fold in pecans.
4.Spoon batter into paper-lined muffin cups. Bake for 19 to 22 minutes or until tops spring back when lightly touched. Cool on a wire rack.
