Carrot Cake Muffins, No Oil - Large Muffins

Introduction

Personal recipe modified to use applesauce instead of canola oil, and cutting out the white sugar.

Recipe makes 6 large muffins (244.7 calories each) - or - 12 regular sized muffins (122.3 calories each)

Number of Servings: 6

Ingredients

    1 1/2 c All Purpose Flour
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/2 tsp Salt
    1 tsp Cloves, ground
    1 tsp Cinnamon, ground
    2/3 cup Apple sauce
    1/2 cup Granulated Sugar (optional - not included in calorie count)
    1/2 cup Brown Sugar
    1 1/2 cup grated Carrots
    2 eggs
    1 tsp Vanilla

Directions

1) Preheat oven to 350 - spray muffin tin with cooking spray
2) Stir together flour, baking powder, baking soda, salt, cloves and cinnamon. Mix well.
3) Add the applesauce, sugar, grated carrots, vanilla and eggs. Beat for at least 2 minutes at medium speed.
4) Pour or scoop batter into prepared muffin tins, smoothing the top optional.
5) Bake at 350 for approximately 30 minutes or until tests done with a toothpick

Makes 6 Large Muffins
