Lemon and Basil Chicken with Linguini



Introduction

This is a nice, light main dish. It's fairly low in fat and is delicious. This is a nice, light main dish. It's fairly low in fat and is delicious.
Number of Servings: 2

Ingredients

    2 bolness, skinless chicken breasts
    1/4 cup extra virgin olive oil
    4 cloves garlic
    juice of one lemon
    5 or 6 fresh basil leaves
    Salt and pepper to taste

Directions

Slice 4 cloves of garlic.
Chop the basil.
Mix with 1/4 cup olive oil.
Add the juice of one fresh lemon.

Place the chicken breasts in this mixture and let sit covered in the refrigerator for 30 minutes or so turning several times.

Remove the chicken and cook on a grill till just done. This could be either a gas grill or charcoal or even a stove top grill.

While the chicken is on the grill, cook the linguini in boiling salted water.

Take the olive oil, garlic, basil and lemon juice mixture and place in the microwave and bring to a boil.

Drain the linguine and add the olive oil mixture.

Plate the linguini with the grilled chicken breast on top.

This dish works well with a nice grilled mixed vegitable side dish.
