Roasted Lemon Potato Soup

Introduction

This is not lowfat, but it is super good if you like velvety soups without cream! The roasted lemon adds a great flavor. I usually use leftover roasted vegetables to make this soup so the combinations change slightly by adding carrot or fennel. Ingredients

    2 Sweet Potatoes, cubed
    2 Potatoes, cubed
    1 large Onion, chopped
    1 Lemon, sliced into wedges
    1/4 cup Olive Oil
    2 tsp Salt
    2 tsp Freshly Ground Black Pepper
    2 cups Chicken Stock



Directions

Combine the first 7 ingredients and lay on a cookie sheet and roast in the oven at 450 degrees F for 30 minutes. Remove from oven and place in a sauce pan. Add chicken stock and boil for a few minutes until the chicken stock has heated though. Take off the heat and use an emersion blender to blend soup into a creamy consistency. Or transfer to a blender and blend in batches. Reheat and eat.
