Chicken Curry with Greek Yogurt

Ingredients

    ngredients:

    * Chicken Breast, no skin, 2 breast, bone and skin removed (remove)
    1 tbsp butter
    * Shallots, 4 tbsp chopped (remove)
    * Curry powder, 2 tbsp (remove)
    * White Wine, 2 fl oz (remove)
    * Oikos Organic Greek Yogurt, Plain, 6 oz (remove)
    * Sour Cream, reduced fat, .5 cup (remove)
    * Cornstarch, 100 grams (remove)
    * Parsley, 6 tbsp (remove)
    * Lemon juice, 1 tbsp (remove)

Directions

Melt 1 tablespoon butter in a heavy saute pan. Do not brown. cut up chicken breast into 1 inch bite size pieces and saute in butter until no longer opaque and cooked through, about 10 minutes. Than add the chopped shallots and curry powder and stir to coat. Simmer about 5 minutes to blend flavors. Add white wine and reduce by half. Take pan off of the heat and add the yogurt and the sour crream. If it is too thin, mix a tablespoon of cornstarch with 1 tablespoon of water, whisk and add to the sauce. Stir until thickened. Add parsley and lemon juice. Stir to combine and serve hot over your choice of rice.
