Shrimp Stuffed Sole

Number of Servings: 6

Ingredients

    6-7 Sole Fillets (about 1 pound)
    1/2 lb Raw Shrimp (cleaned, peeled, diced)
    2 cups crushed saltines (about 1 full sleeve of saltines)
    4 Tblsp melted butter
    1/2 cup NonFat Milk

    Salt, pepper, Old Bay to taste

    Optional 1/2 cup Diced celery

Directions

clean, peel, dice raw shrimp
crush 2 cups saltines
melt butter
hand mix shrimp, saltines, butter and milk.
season to taste
put 1/4 to 1/2 cup of mix in each fillet of sole and roll.
place it lightly greased dish and bake 20 to 30 mins until shrimp is pink and fish flakes.

also great when drizzled with hollandaise sauce.
