Fish Tacos

Ingredients

4 Tilapia filets
***Marinade ingredients***
1 Garlic clove, crushed
1/4 tsp Chili powder
1/2 tsp Cumin
1/2 tsp Sea Salt (optional)
1/2 cup Newman's Own Organic Chunky Medium Salsa
(I use my homemade salsa, nutritional calculations are based on Newman's Own)
1 Avocado, smashed until smooth
***Salsa topping***
3 Tomatoes, chopped
1/4 cup green onion, chopped
1 Jalapeno Pepper, chopped & seeded
1 tbsp lime juice
1 drizzle olive oil
2 tbsp Cilantro, chopped
1.5 Cabbage, shredded
12 (6" dia) Corn Tortillas
Directions
In a bowl or container of your choice, mix together salsa, chili powder, garlic, and cumin. Add the fish and allow to marinate for at least 30 minutes but not more than 2 hours.
In a medium bowl, combine tomatoes, jalapeno, cilantro, green onion, and olive oil. Set aside for at least 30 minutes to allow flavors to blend.
Smash avocado until smooth. This can be used as the topping or a spread.
Preheat oven to 350 degrees. Drain the fish from marinade, bake fish until cooked through, about 10-12 minutes. Cut into strips and transfer to a warm plate.
Wrap the tortillas in a clean, wet dishtowel. Put the wrapped tortillas in a microwave oven and heat on high until hot and soft, 1-2 minutes.
To serve, put the warm fish, corn tortillas, salsa, avocado, and cabbage in separate dishes in the center of the table. Have each person make their own tacos, adding the ingredients of their choice.
