â€¢ 2.5 pounds skinless, boneless chicken breast, cooked and cubed
â€¢ 2 cans low-fat condensed cream of mushroom soup
â€¢ 2 cans low-fat condensed cream of chicken soup
â€¢ 1 can Ro-TelÂ® tomatoes with green chilies
â€¢ 1 green pepper, chopped
â€¢ 1 large onion, chopped
12-14 corn tortillas
â€¢ 2 cups shredded 2% cheddar cheese or fat free
SautÃ© green pepper and onion in nonstick skillet sprayed with cooking oil spray.
Mix sautÃ©ed green pepper and onions with both soups, tomatoes with chilies and cubed chicken.
In a 13 x 9 casserole dish, layer mixture alternately with tortillas and cheese.
Bake at 300Â°F for 40 to 45 minutes
