Ingredients

    makes 4 normal size portions or 2 extra huge for me and the hubs.


    * *Dole Pineapple Tidbits 100% Pineapple juice, 1.5 cup DIVIDED (remove)
    * Pineapple Juice, 0.5 cup FROM TIDBIT CAN(remove)
    * Lime Juice, 0.125 cup (remove)
    * Honey, 0.25 cup (remove)
    * Garlic powder, 0.25 tsp (remove)
    * braggs liquid aminos -- USE THIS ONE, 2 tsp (remove)
    * *Ginger Powder, 1 tsp (remove)
    * Onions, raw, 1 cup, chopped (remove)

Directions

Sauce (put all sauce ingredients into blender and puree until smooth):

1/2 cup crushed pineapple
1/2 cup pineapple juice
2 tablespoons lime juice
1/4 cup honey
1/4 tsp. garlic powder
2 tsp. braggs liquid aminos
1 tsp. ginger powder

Preheat the oven to 375. Lay the tofu in an oiled baking dish, sprinkle the onion over it, and pour the prepared sauce on top. Cover and bake for 25 minutes. Remove the cover and add the pineapple chunks and bake uncovered for 10 more minutes. (If you want, you can turn the broiler on for part of this time to brown the pineapple slightly.)

Serve by placing the tofu and broccoli over a bed of rice and spooning sauce and pineapple pieces over all.
