Clean Eating's Lentil and Spinach Soup

Ingredients

    1 bag dry lentils
    6 C water
    2 vegetable boullion
    1 onion, chopped
    10 oz box frozen spinach, thawed
    1 Tbsp olive oil
    1-2 tsp curry powder

Directions

Heat oil in a pot. Add onion and brown. Pour in water and lentils and boullion. Cook for 40-50 minutes until soft. Add curry powder and more water depending on the consistency of the soup you desire. Add spinach and cook until heated through.
