1/2 C. Olive Oil
Juice from two lemons
1/2 cup green pitted olives
2 T. capers packed in salt (brined capers can be substituted)
2 cloves garlic
2 pounds chicken breasts with skin.
6 sprigs of fresh rosemary.
Place covered pan in refrigerator for a minimum of 1 hour ... turning the chicken every 30 minutes or so.
Preheat the oven to 400 degrees.
Bake chicken with lid on for 20 minutes, then remove the lid and continue to cook chicken for 10 minutes ...
Serves 4 - 6 people.
Option ... sprinkle a little parmegiano reggiano over top just before serving.
