1 Tbs. Olive oil
1 onion Chopped
3 Garlic Cloves, sliced
1 Carrot, Chopped
2 Stalks Celery, chopped
2 Qt..(8 cups) low salt vegetable stock or both
2 cans (15or16 ounces each) Black beans, rinsed and drained
1/4 t. cayenne pepper
1 t.Ground Coriander
1 Tbs. Balsamic vinegar
1 Bunch Cilantro leaves chopped
heat oil in a large saucepan ( I use my pressure cooker on brown). Add onion; cook 5 mins. stirring occasionally. Add garlic, carrot, and celery; cook until soft, about 5 mins. Add stock, beans, coriander, cayenne pepper, and vinegar. set pressure cooker to low steam for 1 hour. Or simmer for 10 mins. uncovered. Transfer to a blender or food processor to desired consistency. reheat if necessary. serve in a shallow bowl and garnish with cilantro.
I enjoy this accompanied by a green salad.
