Turkey and Quinoa Meatloaf

Introduction

I got this recipe off allrecipes.com. I used ground pork because that's what I had. It turned out really good. My husband says "it's a keeper".

This will make 6 to 8 servings depending on how thick you slice it.

Ingredients

    1/4 cup quinoa
    1/2 cup water

    1 tsp olive oil
    1 samll onion, chopped
    1 large clove garlic, minced

    24 ounces ground turkey
    1 tbsp tomato paste
    1 tbsp hot pepper sauce
    2 tbsp worcestershire sauce
    1 egg
    1 1/2 tsp salt
    1 tsp pepper

    2 tbsp brown sugar
    2 tsp worcestershire sauce
    1 tsp water

Directions

1) Bring the quinoa and water to a boil in a saucepan over high heat; reduce heat to medium-low and summer until quinoa is tender and the water is absorbed (about 15-20 minutes). Set aside to cool.

2) Preheat oven to 350 degrees.

3) Heat olive oil in medium skillet, stir in onion, cook until tender; add the garlic and cook about another minute. Remove from heat and let cool.

4) Stir turkey, cooked quinoa, onions & garlic, tomato paste, hot sauce, 2 tbsp worcestershire sauce, egg, salt, pepper in a large bowl until well combined. The mixture will be very moist. Shape into a loaf on a foil-lined baking sheet.

5) Combine the brown sugar, 2 tsp worcestershire & 1 tsp water. Rub paste over top of meatloaf.

6) Bake until no longer pink in center, about 50 minutes or thermometer reads 160 degrees. Let cool ten minutes before cutting.
