Just a basic recipie for Country Fried Chicken. It is not the healthiest, but as long you pair it with healthy sides and keep your other meals low calorie, its not to bad. Number of Servings: 8

Ingredients

    20 ounces of chicken (your choice of chicken)
    2/3 cup vegetable oil
    1 cup all-purpose flour
    1-1/4 teaspoons salt
    1-1/4 teaspoons ground black pepper
    5-1/3 cups milk

Directions

Fry the chicken the way you want. I used a deep fryer. To save on calories, you can actually back the chicken. Set aside.

Heat the oil in a large skillet over medium heat. Whisk in the flour, salt and pepper until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.
