Vegetarian Rice Pilaf

Ingredients

    1 Tbsp olive oil
    1 carrot, peeled and chopped into 1/4 inch pieces
    1/4 onion, diced
    3/4 cup long grain rice
    1/3 cup white wine
    1 can (14 oz) vegetable broth
    1/2 cup frozen peas
    1 tsp garlic salt
    2 Tbsp chopped fresh parsley

Directions

Heat oil in large saucepan until hot. Saute onion and carrot in oil for 2 minutes. Add rice and stir to coat rice with oil. Add wine to pan and bring to boil for 1 minute. Add peas, vegetable broth, and garlic salt. Bring to boil, cover, reduce heat and simmer 20 minutes or until liquid is absorbed. Just before serving, stir in parsley.

Makes five 3/4 cup servings.
