Mom's Split Pea Soup

Number of Servings: 8

Ingredients

    2 C split peas, rinsed
    1 C diced carrots
    1 C diced celery
    1 C diced onion
    1/8 tsp marjoram
    Dash of cayenne pepper
    1 bay leaf
    1/2 tsp kosher slat
    2 quarts of water
    1 C diced ham

Directions

Mix all ingredients except the ham in a large pot, cover and cook slowly for one hour. Using a potato masher smash soup into a smooth blend. May take more than an hour because you want all the veggies to be soft. When soup is smooth and ham and cook about 5 minutes more. You can leave out the ham to make it vegetarian. And add more water if you like it thinner. Each serving should be about 1/8 of recipe, which should be about 1 1/2 cups or more.
