Introduction

Large, rich, dark chocolate craisin & walnut oatmeal cookie, a bit dense and chewy. If you don't have the sesame tahini, you can swap/use peanut butter instead. If you don't have the Brown Rice Syrup, try honey, agave, molasses or packed brown sugar instead. Or Swap the walnuts for macadamia, pistachios, pecans or almonds! Yum! Ingredients

    2 cups regular rolled Oats, dry
    1 1/4 cup Whole Wheat Flour, dry
    1/2 c dry baking cocoa
    1 Tbsp Cinnamon, ground
    2 tsp Ground Nutmeg
    1 tsp Baking Soda
    1/2 tsp salt
    1/2 cup Sesame Tahini
    2 tbsp butter
    1 cup Brown Rice Syrup
    1 Lg Egg
    2 tsp Vanilla Extract
    3/4 c Walnuts, chopped
    3/4 c Craisins
    1 cup 60% dark chocolate chips

Directions

makes 45 cookies (3 pans, 3x5 rows)

Preheat 350 degrees
.
blend wet ingredients, stir dry ingredients together and into the wet ingredients. Spoon large drops off a soup spoon onto baking sheet 3 across by 5 rows, about 2 inches apart. Bake 15 - 18 mins (will flatten, longer makes a harder cookie). Let cool 5 mins.

Note: If peanut butter is substituted for the tahini, after you make the scoops on the cookie shee, press to flatten a little bit. (they won't flatten when cooking, turn out denser, less chewy).
