M's Banana Bread

Number of Servings: 12

Ingredients

    2 cups flour
    1 teaspoon baking powder
    teaspoon baking soda
    tsp salt
    cup soft butter or margarine
    1 cup sugar
    1 cup mashed bananas
    2 eggs
    1 teaspoon vanilla
    1 teaspoon lemon juice
    1 cup nuts, coarsely chopped (optional)

Directions

Sift flour & dry ingredients together. Blend sugar and butter. Beat in eggs and bananas. Gradually add dry ingredients, mixing well after each addition. Add vanilla & lemon juice and beat 2 minutes longer. Fold in cup nuts by hand.

Pour batter into greased & wax paper lined 9x5x3 inch bread pan. Sprinkle remaining cup nuts on top of loaf and bake at 350 for 1 hour 15 minutes.

One batch will make 12 muffins & I bake for about 20 minutes.
I have made this with half white/half wheat flour- very tasty too!
