Clean Eating Roast Vegetables

Ingredients

4 medium carrots
1 cup broccoli
1 cup cauliflower
2 cups red potatoes
Olive Oil, 4 tbsp
Rosemary, 1 tsp
Garlic, 4 clove
Marjoram, dried, 1 tbsp
Directions
1) Preheat oven to 350. Peel all vegetables and quarter the potatoes. Toss all in oil, garlic, marjoram a,d rosemary. Arrange in a roasting pan coated with cooking spray. Cover with aluminum foil and bake 35 minutes.
2) Uncover and turn vegetables with a large spoon. Bake another 20-30 minutes.
