Ingredients

    1 can black beans
    1 can yellow corn
    1 cup cherry tomatoes
    onions (green or red)
    1 avacodo cubbed
    2 cloves garlic or garlic powder to taste
    1/4 cup light or fat free italian dressing
    cumin - 2 T
    Juice of 1 lime
    salt and pepper to taste

  • I love this! i made a batch on Monday and I've been eating it for lunch all week in tortillas. I even skipped the Italian dressing and i still love it! Next week I am adding some shrimp to up the protein...can't wait! - 4/9/10
