Ingredients

    Classic Romaine lettuce, 3 cup
    Shrimp, Cooked, Tail-Off (11=3oz), 3 oz
    Corn Tortilla 1 Tortilla
    Grape Tomatoes 1/2 cup chopped
    Red Onion Raw 1/2 cup
    Green Pepper 1/2 cup
    Black Beans, 1/4 cup
    sweet corn kernals, 1/4 cup
    White Wine Vinegar, 1 tbsp
    Lime Juice, 1 tbsp
    Equal/ Sweet N low, 1 packet
    Taco Seasoning, 1/4 tsp
    Fat Free Ranch Dressing 3 tbsp
    Tomato Paste 1 1/2 tsp
    Taco Seasoning

Directions

Pre heat oven to 400

Cut Tortilla into matchstick size strips. Lightly spray a baking pan with nonstick spray, and place strips in the center of the pan

Sprinkle 1/4 tsp Taco seasoning over strips and carefully toss them to evenly distrubte seasoning. Spread strip accross pan, place in oven and bake for 5-7 minutes, until strips look crispy. Remove and set aside

In a small dish , combine 2 tbsp of water with the vinegar, lime juice and sweetner. Place peppers and onions in small mircowave-safe dish pour vinegar mixture ove them, cover and heat in microwave for 2 mintues

Add beans and corn to veggies. Stir well and then drain off vinegar mixture. Place dish in the fridge untill chilled.

Once ready to serve, place lettuce in a large bowl and topwith veggie/bean mixture. Add shrimp, tomatoes and tortilla strips.

Mix dressing
