3/4 c uncooked rice - minute rice (I used brown) 1 c sliced mushrooms 1 1/2 lbs bonless/skinless chicken breasts, diced 1 3/4 c fat free chicken broth (recipe said 2 cups, but it seemed really liquidy at first) 12 oz can fat free evaporated milk 8 oz salsa (bascially half of 16 oz bottle) 3/4 c. 2% shredded cheddar cheese
Layer rice and mushrooms in a 9x13 baking dish. Placed diced chicken on top of rice. Combine broth, evap milk and salsa; slowly pour over chicken. Bake 45 minutes @ 375. Sprinkle cheese on top the last 5 minutes of baking.
