Chewy Chocolate Chipped Dough Ball Cookies

Introduction

If you like chewy, thick style cookies and happen to be a vegan, this is for you. Non- vegans can use standard staples in this recipe, but I don't know how it'll turn out. Ingredients

    1 Cup Earth Balance
    3 3/4 Cup Unbleached Flour
    1 Cup Date Sugar
    2 Teaspoons Baking Powder
    2 Ener-G Egg Replacements
    1 Teaspoon Vanilla Extract
    1 Cup Vanilla Soy Milk
    1 Tablespoon Light Agave Nectar
    1 1/2 Tablespoon Unsulphered Molasses
    1/4 Cup Tofu Cream Cheese

Directions

Preheat oven to 350 Degrees. In large bowl, combine dried ingredients first: flour, sugar, and baking powder. In a seperate, small bowl mix up the Ener-G replacement then add to the dry mix in the large bowl. Throw in the vanilla, Earth Balance, cream cheese, agave, molasses, and soy milk. Mix well. After the mix has good consistancy, add the chocolate chips while stirring very slowly.

Spray your cookie sheet(s) and plop a table spoon size or slightly larger of batter. They will not get much bigger than what you dish them out as, so you can eyeball the spacing rather easily. Pop into the oven for about 15 minutes. I always check after only 10, but most often need to leave them in the additional five minutes. Enjoy.
