Mom's Potato & Bean Soup

Introduction

Simple, earthy, peasant soup for a cold winter evening. Adding spinach or escarole is an option. Great when served with a salad and Italian bread. Enjoy! Number of Servings: 8

Ingredients

    1 T olive oil
    1 large onion, diced
    6 large potatoes, peeled and diced
    6 c cooked kidney beans (can use 2 cans rinsed)
    spinach or escarole optional

Directions

1. In 4 qt pot heat oil, add onion and saute until soft (5 min).
2. Add diced potatoes, cover with water, bring to boil. Boil until soft (10 min).
3. Add kidney beans, heat thoroughly
4. Add spinach optional
