Whole Wheat Chili Mac Skillet

Ingredients

    1 lb ground elk or other very lean ground meat
    1 cup cooked red kidney beans
    1 small diced onion
    1 Tbsp taco seasoning (equal parts oregano, garlic powder, onion powder, chili powder, and cumin)
    1 Tbsp Chili powder
    2 14 oz cans diced tomatoes (no salt added)
    1 14 oz can whole kernel corn (no salt added), drained
    1 cup grated Colby Jack cheese

Directions

Cook pasta according to package instructions. Brown ground meat with onion and spices. Add beans, tomatoes and corn. Stir cooked pasta into meat sauce. Top with cheese and cover. Allow to simmer until cheese melts. Makes 6 (1.5 cup) servings.
