True Southern Banana Pudding

Introduction

So many recipes say they are southern, but my husband's family lives in Abbeville, SC and this is true southern banana pudding. A true southerner NEVER uses a box of pudding for banana pudding!! Number of Servings: 10

Ingredients

    1/2 cup sugar
    1/3 cup flour
    dash of salt
    2 c. milk
    3 egg yokes
    1/2 t. vanilla
    20 nilla wafers
    2 - 3 bananas

Directions

Mix sugar, flour, and salt in the top of a double boiler. stir in milk, then egg yokes. Cook, uncovered, over boiling water, stirring continually, until thickened. Remove from heat and add vanilla. In a 1 1/2 quart bowl or casserole dish, layer cookies, bananas, pudding - in two or three layers, depending on the shape of you bowl or casserole. Cover and refrigerate until ready to serve.
