Creamy Vegetable Chowder

Ingredients

    Onions, raw, 1 cup, chopped
    Celery, raw, 2 cup, diced
    Carrots, raw, 1 cup, chopped
    Potato, raw, 1.5 cup diced
    low sodium non fat chicken broth, 4 cup
    Thyme, ground, 1 tsp
    Bay Leaf,1
    Cut Green Beans, 1 cup
    Peppers, sweet, red, raw, sliced, 1 cup
    Zucchini, baby, 1 medium
    Peas, frozen, 1 cup
    Milk, nonfat, 2 cup
    Laughing Cow Light Creamy Swiss Original Cheese 4 wedges
    Oikos Organic Greek Yogurt, Plain, 6 oz

Directions

In large pan add onions, celery, carrots, potatoes and broth. Bring to boil add spices. Reduce heat and simmer until veg soft. With slotted spoon remove 1 1/2 cups cooked veg set aside. Add beans, peppers and zucchini. In blender mix the reserved veg, cheese, yogurt and milk blend until smooth. Mix with the rest of soup simmer gently untli heated through.
