1 envelope Knox unflavored Gelatin 1/4 C water 2/3 C vanilla protein powder (I use whey) 1/3 C nonfat dry milk 1 tsp pumpkin pie spice (to taste) 1/2 tsp cinnamon 4 packets of Truvia or Stevia 1 can PURE pumpkin
Pour 1/4 C cold water into small microwave-safe bowl. Sprinkle gelatin into water & stir. Micro on high for 1 minute. Slowly add protein powder, dry milk, sugar substitute & spices into dissolved gelatin, stir to combine. Add pumpkin to dissolved gelatin mixture & stir well. Immediately pour pumpkin mixture into pie pan. Cover with plastic wrap & chill at least 20 minutes or until firm & ready to cut.
