Introduction

This quick easy crock pot meal is high on flavor. It can be served over rice but we have found that due to the amount of sauce it creates, mashed potatoes are even BETTER! This quick easy crock pot meal is high on flavor. It can be served over rice but we have found that due to the amount of sauce it creates, mashed potatoes are even BETTER!
Number of Servings: 10

Ingredients

    2-3 pounds of cubed, browned, pork tenderloin
    Sauce:
    2 Tblsp. Cornstarch
    3 Tblsp. Low Sodium Soy Sauce
    2 Tblsp. apple juice
    3 tsp. grated ginger root
    1/4 cup packed brown sugar
    1/4 cup Rice Vinegar (or rice wine)
    3 garlic cloves
    One whole onion, sliced
    Two Green Bell Peppers, sliced

Directions

Makes 10 1-cup servings. (This is an estimate)
Cube and brown pork in skillet and put as first layer in crock pot. Mix together Brown Sugar, Rice Vinegar, Ginger Root, Apple Juice, Soy Sauce, Cornstarch and Garlic. Pour over pork. Top with onion slices then green pepper slices. Cook on low for 10 hours.
