Introduction

Just a soup I made because we were sick and needed a hearty soup. Makes approx 8-10 healthy cups. Just a soup I made because we were sick and needed a hearty soup. Makes approx 8-10 healthy cups.
Number of Servings: 8

Ingredients

    1 cup onion, chopped
    2.3 lbs boneless/skinless chicken breast, cubed
    11/2 cups celery, chopped with the leaves
    1 cup sweet red pepper, chopped
    3/4 cup green onion, chopped
    4 cups mushrooms, after sliced
    1 14.5oz can diced tomatoes w/ chili
    2 cloves garlic, minced
    3 tsp kosher salt
    3/4 cup pearl barley
    2 1/2 cup chicken broth
    6 tsp worcestershire sauce
    4 tsp chipotle seasoning
    3 tsp knorr swiss (or boullion)

Directions

Preheat slow cooker on low;
chop all the ingredients and add to cooker;
add barley, can tomatoes, boullion, chicken broth, worcesteshire sauce, salt and chipotle seasoning;
turn cooker to high and cook for approx. 5 hours.
