Wheat Berry Chili

Ingredients

1 cup dry wheat berries
3 cups water
2 tsp canola or olive oil
1 onion, chopped
1 green pepper, chopped
1 yellow pepper, chopped
4 tsp chili powder
1/4 tsp Tabasco
1/8 tsp black pepper
8 oz can tomato sauce
28 ox can diced tomatoes (I used fire roasted)
2 cup beef broth
15 oz can kidney beans
15 oz can white beans
salt, to taste
Directions
Bring wheat berries and 3 cup water to a boil, reduce heat to simmer and cook for one hour until tender. Add more water during cooking if necessary. Drain, rinse with cool water and drain thoroughly.
Heat oil in large stock pot over medium heat, add onion, green pepper and yellow pepper and cook until tender, about five minutes. Add all remaining ingredients; increase heat and bring to a boil. Reduce to a simmer and cook, uncovered, for one hour or until desired consistency is reached, stirring occassionally. Top with low/fat free sour cream and/or fat/low fat cheddar cheese, if desired.
