Introduction

Yummy breakfast that is quick and easy. Also good with a slice of whole grain toast. Yummy breakfast that is quick and easy. Also good with a slice of whole grain toast.

Ingredients

    1 whole egg
    1 egg, white only
    2 tbs chopped white onion
    2tbs chopped italian squash or zucchini
    1/2 cup fresh cut into smaller pieces spinach
    4 grape tomatoes diced with seeds removed
    Feta cheese

Directions

In a small bowl whisk together egg and egg white, add spinach and set aside. In a small skillet saute onion and zucchini in cooking spray till tender, add egg mixture and scramble till eggs are cooked to desired doneness. Transfer cooked eggs to a bowl or plate, top with tomato and a sprinkle of feta cheese. Enjoy
