2 cups sliced yellow squash 1 egg beaten 1/2 cup flour salt pepper to taste 1/4 cup canola oil for frying
Slice and wsh squash, pat dry. Beat egg and place in shallow dish. Put flour, salt, pepper in another shallow dish. Heat oil in heavy bottom frying pan. Roll squash in egg misture and then flour and fry until golden brown and fork tender. Put on paper towel lined plate to drain. Sprinkle with additional salt if desired. Serves 6 about 5-6 slices each.
