Korean Teriyaki Stir Fry with tofu and veggies

Introduction

Simple, no fuss Asian stir fry that people will envy at lunch the next day at work. Simple, no fuss Asian stir fry that people will envy at lunch the next day at work.
Number of Servings: 4

Ingredients

    1 cup uncooked brown rice
    1 block extra firm tofu
    1 bag frozen Stir Fry vegetables (I use Jewel brand Japanese style)
    9 tbsp Korean Teriyaki sauce (I use House of Tsang, about half the bottle)
    1 tbsp peanut oil
    1 clove garlic, crushed

Directions

Cook rice separately according to packaging. Halfway thru rice cooking, cut tofu into cubes and toss in pan with heated peanut oil and crushed garlic. After tofu gets nice and brown, add in frozen veggies and sauce. Heat until thawed, serve over brown rice.
