    .25 C egg substitute
    2 C whole wheat flour
    1 C pumpkin
    1 Tbsp butter
    1 C splenda
    cinnamon, nutmeg, ginger (ground) or pumpkin pie spice to taste

Directions

preheat oven to 350
blend butter, sweetener and water
beat in egg and pumpkin
stir in flour
drop in muffin cups
bake 10-12 minutes
