Creamy Chicken & Carrot Pasta

Ingredients

    3 boneless/skinless breast tenders
    1 cup carrots
    1 cup whole grain penne pasta
    4 Tbsp Kraft Grate-It-Fresh Parmesan cheese
    2 Tbsp Fleishman's light margarine
    1/4 cup 1% milk
    1 tsp garlic powder (NOT SALT!)
    Salt/pepper to taste

Directions

1) Bring a pot of water to a boil and add your penne pasta.
2) While your pasta is boiling, add 1 tbsp of the margarine to a skillet. Add in the carrots.
3) Cut the raw chicken into bite sized pieces and add it to the skillet. It is easier to cut raw chicken into smaller pieces with scissors rather than a knife!
4) Add the garlic powder to the skillet.
5) When the chicken takes on an all-over white appearance and then starts to brown, take 1/4 cup of the boiling water from the pasta and add it to the skillet. Cook until the water has boiled off, turn off the heat, and cover with a lid.
6) When the pasta is done, drain it thoroughly and add it to the skillet.
7) Add in the remaining margarine, the milk, and the cheese. Mix well. Turn on the heat to low and allow the to cheese melt.
8) Serve and eat!

Serves one as a whole meal or two people as a side dish.

  • We enjoyed this, I made it for the family and for the leftovers so I added much more pasta and chicken- I did add a little mozzarella at the end just to give it a little more stick.
