Introduction

This is a quick and yummy filling that is great with omelets, scrambled eggs, and breakfast burritos. The nutrition info is for the filling only. You can reduce the sodium by rinsing the canned tomatoes. This is a quick and yummy filling that is great with omelets, scrambled eggs, and breakfast burritos. Ingredients

    1 cup chopped onion (I used sweet onion)
    1 cup chopped bell pepper ( Any color)
    1/2 cup canned diced tomatoes with jalapeno peppers (drained)
    olive oil cooking spray

Directions

Heat skillet over med to med-high heat. Coat with cooking spray. Add pepper and onion and cook, stirring occasionally until done to your liking. Add tomatoes and heat through. This filling is now ready for your omelet! Also great on srambled eggs, or filling a breakfast burrito. For extra kick, add a dash of hot sauce or some red pepper flakes.
Makes 3 servings (1/2 cup each)
