Best Chicken Enchiladas

Introduction

By cutting the cheese portion in half, using 2% instead of regular cheese and using low carb tortillas, these tasty enchiladas are now absolutely wonderful and healthy! By cutting the cheese portion in half, using 2% instead of regular cheese and using low carb tortillas, these tasty enchiladas are now absolutely wonderful and healthy!

Ingredients

    1- 1.5 lbs chicken breasts
    2 tsp lemon pepper
    1 tsp salt

    1 large onion chopped
    1- 10 oz green enchilada sauce
    1- 10 oz red enchilada sauce (I use medium spice)
    8 - low carb flour tortillas, fajita size
    2 cups 2 % shredded cheddar/mont jack cheese

Directions

Sprinkle chicken with salt and lemon pepper. Spray cooking spray into non stick pan and heat over med-high heat. Add onion and cook until soft. Remove to a bowl. Add chicken to skillet and cook through. Remove to bowl. Let cool and shred with two forks.
Preheat oven to 350. Pour enough red enchilada sauce into a 9X13 baking dish to cover the bottom.
Take one tortilla and layer 2-3 TB chicken in the middle. Add 1 TB (or more) onion and 1 TB green enchilada sauce on top. Sprinkle with 2 TB cheese. Roll and place in baking dish. Repeat with remaining tortillas.
Pour remaining red and green enchilada sauce on top of all rolled tortillas, covering them all. Sprinkle with remaining cheese.
Bake 30-35 minutes until bubbly.
Serve while warm.
Serving size 1 enchilada.
