Greek cucumber and tomato salad

Introduction

Pairs nicely with greek yogurt chicken kabobs and fresh pita bread Pairs nicely with greek yogurt chicken kabobs and fresh pita bread
Number of Servings: 16

Ingredients

    2 english cucumbers, diced
    3 cups diced roma tomatoes (3-4 tomatoes)
    1.5 cups feta cheese ( I use variety seasoned with basil and
    sun dried tomato)
    1 cup sliced black olives
    6 pieces sun dried tomatoes (in jar with olive oil) diced, oil
    reserved to drizzle on salad
    1/2 small red onion, diced

Directions

Toss all ingredients. Cover and chill until ready to serve. Makes about 16 servings, 1/2 cup each.
