Introduction

A little concoction my mom likes to make instead of having a side of pasta with sauce; it tastes very good and is very filling. A little concoction my mom likes to make instead of having a side of pasta with sauce; it tastes very good and is very filling.
Number of Servings: 8

Ingredients

    Zucchinis (4-5) diced into cubes
    Eggplants (2-4) diced into cubes
    Green bellpeppers (3-4) diced into cubes
    some jalapeno peppers for some spicy flavor if you like

Directions

Slice zucchini (4-5) and eggplants (2-4) and peppers (3-4) into small cubes and put all together in a large cooking pot.
Add enough water into the pot to cover all the ingredients.
Turn on the stove to medium heat and let it boil/simmer for as long as it takes for the ingredients to get soft and juicy (usually 20-30 minutes).
Stir occasionally.

Once everything is done, empty into in a large container on the side to let it cool down a little.

You can have this hot or cold but I prefer it cold as a side dish to anything!
