Olive Garden's Zuppa Toscana

Ingredients



    Johnsonville Mild Italian Saugage Link, 1 package
    Gnocchi, 4 serving
    Fat free half and half, 3 cup
    Chicken stock, home-prepared, 5 cup
    Kale, 2 cup, chopped
    Onions, raw, 2 cup, chopped
    Garlic, 4 cloves
    Red Pepper flakes
    Bay Leaf, 2-4
    Dash oregano
    Dash salt & pepper

Directions

Remove casing from sausage. Brown in skillet with chopped onion and garlic. Crumble sausage as it cooks. Drain. Add to large stock pot, along with sausage mixture: 2 packages potato gnocchi, as much chopped kale as you like (I like to add 2 or more rinsed bunches), 2-4 bay leaves, a light sprinkling of oregano, a dash of salt & pepper. Cover ingredients with chicken stock to an inch or two above them. Stir in fat-free half and half until soup takes on a slightly creamy color. Cook over medium, stirring occasionally, until soup has bubbled for about 10 minutes. Remove from heat, and serve with a dash of dried red pepper flakes.

You can stretch this soup as much as you like! This pot, as outlined here, serves my family for 4-5 meals, including lunches at work.
