Ingredients

1 (6 oz) cod fillet, 1-inch thick or similar white meaty fish (e.g. grouper or sea bass)
3 tablespoons mango-peach salsa, divided
1/4 cup fresh pineapple, diced
Vegetable spray

Directions
Preheat oven to 350 degrees. Lightly spray an oven-proof skillet with vegetable spray. Over medium high heat, saute cod fillet one minute each side. Top with 2 tablespoons salsa. Remove from heat; place skillet in oven and bake about 10 minutes. Mix 1 tablespoon salsa and 1/4 cup diced fresh pineapple. Top cooked cod with pineapple mixture.
