Spicy Pork Stir-Fry

Ingredients

    1 tbsp vegetable oil
    15oz pork tenderloin thinly sliced
    1 red bell pepper cut inot 1/2" strips
    8 medium scallions cut into 2" pieces
    2C drained canned pineapple chunks
    1 medium tomato cut into 8 wedges
    1 medium jalepeno pepper finely chopped
    2 tsp finely chopped ginger root
    1 tsp finely chopped garlic
    1 tbsp + 1 tsp soy sauce
    1 tsp dark sesame oil
    1/4 cup chopped fresh cilantro

Directions

heat nonstick wok or large skillet over high heat

add vegetable oil, then pork slices - stir fry until pork is no longer pink (1-2 minutes) Remove with slotted spoon and reserve

add bell pepper - stir fry 2-3 minutes until edges blister slightly

add scallions stir fry 30 seconds, add pineapple - stir fry another 30 seconds

add remaining ingredients except cilantro

return pork to wok and stir fry 1-2 minutes more

serve sprinkled with chopped cilantro
