Ingredients



    Boneless Skinless Chicken Thigh,finely diced 17.1 oz
    Canola Oil, 2 tbsp
    Tones Taco Seasoning, 1 tbsp.
    Green Giant canned Corn w/ 50% less sodium, 1.75 cup
    Publix Diced Tomatoes, No Salt Added, 1.75 cup
    Publix Black Beans in Seasoned Sauce, 1.75 cup
    Knorr Chipotle Seasoning Mini Cubes, 2 cubes crushed

Directions

Makes approximately eight one-cup servings.

Place oil in skillet. Heat to medium high temp. Add taco seasoning to chicken and mix well. Add to pan. Stir and cook until cooked through.(about five minutes for finely diced chicken.) After chicken is cooked, add drained corn, tomatoes with liquid, and black beans with sauce. Stir until blended. Crush and add the chipotle cubes. Stir well. Cook until bubbly, stirring occasionally.

Serve with La Tortilla Factory Smart & Delicious High Fiber large whole wheat tortillas for an additional 12 grams of fiber. Offer with Kraft 2% Shredded Mexican cheese and Daisy Light sour cream. Yummy!
