Vegan Chocolate Almond Breeze PuddingSubmitted by: PRAIRIE_MUM
IntroductionThis is a chocolate pudding recipe that I modified for my lactose intolerant husband. It uses Unsweetened Original Almond Breeze, but I think that unsweetened soy milk would work too. Mix dry ingredients together and place in a blender along with the 2 cups of Almond Breeze.

I made this last night! I don't think I'll ever buy little pudding cups again. Thanks so much!!! For me this yielded 1 1/2 cups of pudding which surprised me because it was 2 cups of milk? Anyway...I put it in 1/2 cup dishes and then just logged it as 1.333 servings. Perfect for morning snack!! - 2/15/11
Thank you for posting this! I recently discovered the Almond Breeze unsweetened chocolate flavor at my local store, which I've been drinking as hot cocoa since it's only 45 calories a cup. I've also been craving non-dairy pudding, so now I don't have to guess at the recipe! - 2/8/11
So being the girl that I am, I sometimes have a serious hankering for choclate pudding. (comfort food from when I was little) this blew that hankering out of the water! I actually ate the entire recipe (lets call it a slight weak moment) the flavor was good, slightly deeper after refrigerating. - 2/2/11
