1 lb boneless skinless chicken breast
1Tbs curry powder
dash of salt
2 small oranges juiced (1/2 cup of juice)
1 small orange sliced
1/4 c brown sugar
1/4 c honey
3T prepared mustard (yellow or brown)
Combined orange juice, brown sugar, honey and mustard in a saucepan and simmer for 5 minutes. Pour sauce over the chicken.
Bake at 375 for 30 minutes. Turn the chicken and baste with the sauce, if chicken is looking dry, cover with foil bake 20-25 more minutes. Add orange slices on top of the chicken and finish baking for 4-5 minutes.
Can be served with favorite vegetable and starch. We prefer rice and broccoli. In the summer, this is great chilled and sliced on top of a salad.
