2 tablespoons olive oil
2 peppers cut in chunks
2 onions cut in chunks
1 eggplant cut in chunks
2 tomatos cut in chunks
Saute pepper and onion until onion is translucent. Add eggplant. Cover and continue cooking until soft. Stir occassionally. Add tomato, cover and continue cooking. Once tomato cooks down a liitle, cook uncovered for about 10 - 15 more minutes. Serve plain or over rice.
