Introduction

My husband loves gnocchi so I have been searching for a recipe that uses it without all of the fat and calories of a traditional application. I think this is it! Number of Servings: 6

Ingredients

    1/2 lb Spicy Turkey Sausage (I cut this sausage with TVP sausage to lower the fat in this recipe, don't tell my husband!)
    2 cups water
    1 (16 oz) package vacuum packed (whole wheat if you can find it) gnocchi
    1 (14 oz) fat-free low sodium beef broth
    1 (14.5 oz) can Italian style stewed tomatoes, undrained and chopped
    1/2 cup (2 oz) grated Parmesan cheese

Directions

If you have link style sausage, remove the casing.

Cook sausage in a large dutch oven over medium high heat until sausage is browned, stirring to crumble.

Add water, gnocchi, tomatoes, and beef broth to pan. Bring to a boil then reduce heat and simmer 4-5 minutes until the gnocchi float to the top.

Ladle soup into bowls (approximately 6 servings) and sprinkle with Parmesan cheese.
