Introduction

My daughter, Kati, came up with this easy, healthy dinner one night. The family loved it! Now it is a regular. Most folks have all the ingredients in the pantry, so it can be whipped up easily. My daughter, Kati, came up with this easy, healthy dinner one night. The family loved it! Now it is a regular. Most folks have all the ingredients in the pantry, so it can be whipped up easily.
Number of Servings: 6

Ingredients

    8 oz. whole wheat pasta of choice (bowtie, rigatoni, spagetti)
    2 Tbsp Olive Oil
    2 cloves garlic-chopped
    1 can petite diced tomatoes
    1 can tomato sauce
    1 Tbsp Oregano
    1 Tbsp Basil
    salt and pepper to taste
    1 cup shredded mozzarella-part skim
    1/2 cup grated Parmesan Cheese

Directions

Preheat oven to 400 degrees. Boil water and cook pasta. Only cook 3/4 of the tie recommended. When done drain and set aside.

Heat Olive Oil in pan. Add chopped garlic and 30 seconds later diced tomatoes. Cook until juices are bubbling.

Add tomato sauce, oregano, basil, salt and pepper to the pan mixture. Let cook 5 minutes.

Add in cooked pasta. Let pasta cook in sauce for few minutes then pour into a baking dish. Top with mozzarella and parmesan cheese. Bake in 400 degree oven for 15 minutes or until cheese is bubbly and golden. Makes 6 servings.
